Strata is a savory bread pudding, perfect for breakfast or brunch. It can be made ahead of time making it great for a crowd. Just assemble the night before and pop into the oven when ready to serve. You can customize your Strata with a variety of cheese, vegetables, and meats. Just be sure to cook elements before you add them in.
Gruyer, Spinach, Mushroom and Caramelized Onion Strata
- Day old Crusty French Bread – 8 cups cubed
- 10 eggs
- 3 cups whole milk
- 1 cup cream* (if you don’t have cream you could use whole milk for a total of 4 cups)
- 1 teaspoon powdered mustard
- 2 cups shredded cheese (in this case Gruyer)
Place the bread cubes into a large bowl, set aside. Mix together the remaining ingredients until blended, mix in cheese and pour over the bread. Allow to soak for 30 minutes while you prepare the rest of your ingredients.
- 2 spanish onions sliced
- 1 tablespoon sugar
- 8 oz mushrooms
- 8 oz spinach – chopped
Combine the onions and sugar in a sauté pan with a bit of olive oil and butter. Saute over medium heat until golden brown, about 30 minutes.
Saute the mushrooms and spinach and until wilted. Squeeze out any excess water.
Once cool – add all the flavor elements to the bread cubes and toss to combine.
Bake at 350 for 35-45 minutes until the custard is set. Allow to coo 5 minutes before serving.
