Menma is a traditional topping for Tonkotsu Ramen but also makes a good snack or topping for rice.
Now lets talk about ingredients. Traditionally you are supposed to used dried bamboo shoots for this. But I can almost never find them unless I make the long haul to a Japanese market. So use fresh bamboo shoots when ever I can. (most of the time I can find this in my asian market) If you can not find, try to find canned whole bamboo shoots. this will be much better than the strips that you usually find in chinese stir frys.
- 2 Whole bamboo shoots (or a big can)
- 2T sesame oil
- 1/4 C sugar
- 1/4 C soy sauce
- 1/2 C water
Slice bamboo into thin strips.
In a small hot pot, heat sesame oil and add bamboo shoots. Stir to coat. Add rest of ingredients and allow to simmer until most of the liquid is evaporated, stirring frequently. Remove from heat. cover and refrigerate until ready to use.
