IMG_2469 If there is one thing my man really loves, it’s Brats and Kraut. Served with a ¬†cold beer – that’s his happy place. Here is my version of this german classic. Brats and Kraut¬† Ingredients

  • 8 oz bacon
  • 1 white onion
  • 2 granny smith apples
  • beer (I just use what ever my man has around. He never buys crap beer however)
  • sauerkraut – I get one jar of the good stuff at whole foods when I can, if not, whatever my market has on hand in the refrigerated section.
  • 8-10 small red potatoes
  • 2 lbs Bratwurst

Start by peeling, coring, and slicing up the apples. Slice up the onion too. IMG_2506 Cut the bacon up into small 1/2 inch pieces. Throw into a big pot and fry up until crisp and the fat is rendered. IMG_2507 Add the sliced apples and onions and cook in the bacon fat, or magic elixir as I like to call it, for just a minute or two. Pour in the beer and deglaze the brown bits of yummy from the bottom of the pan. Now Add about 4 cups of water and the kraut. Let simmer on medium low for 30 minutes. Season with just a touch of salt and lots of black pepper. Add the potatoes and let cook for another 20 minutes. Now add the brats to the mix. simmer until the sausage and the potatoes are fully cooked, about 30 minutes. Keep an eye on the liquid, if needed steal another beer to keep from getting dry. I like to take the extra step of browning the brats. Basically I just heat up a pan with just a little oil at the bottom. I toss in the brats and let them brown for just a minute on each side. This adds an extra element of flavor and texture that I love. Served with plenty of kraut and potatoes. (and yes – I like to add a dollop of butter to my potatoes when serving as well)
